Along with boucha (fig brandy), it is the national drink of Tunisia. It is said that its origins date back to the end of the 19th century, when a monastery was established in the Tibar region in northern Tunisia and it was made using a recipe brought over by Dominican monks who immigrated from Switzerland. The monastery later stopped production, but production of Tivalin was taken over by Western alcohol brewing experts, who continue to make it in Tibar according to the original recipe. It is a liqueur made by steeping various herbs in grape-derived alcohol and adding sweeteners. It is generally drunk as an after-dinner drink, but can also be used widely as an aperitif or as a cocktail base.
