Aged for 12 months in 400-liter oak barrels on fine lees.
This vibrant sparkling wine has a golden color and fine bubbles.
The aroma is slightly brioche-like, with notes of pear and white peach. The palate is crisp and fresh, with aromas of quince, dried apricot, citrus peel, licorice, and hazelnut.
This wine pairs well with raw fish and various seafood dishes, as well as creamy cheeses such as goat's and sheep's cheese. It also pairs exceptionally well with sabayon sauce.
Chenin Blanc, also known as Pinot de la Loire (Pinot), is a representative grape variety of the Loire Valley, blessed by the region's tuffaceous soil and climate.
All grapes are hand-picked, and no pesticides, fungicides, herbicides, or chemical fertilizers are used in its cultivation. The producer, Jean-Bernard Mette, is also active as a sculptor.
