Aged for 12 months in 400 litre oak barrels on high quality lees.
A vibrant sparkling wine with a golden colour and fine bubbles.
The nose is slightly brioche-like with notes of pear and white peach, while the palate is crisp and fresh, offering aromas of quince, dried apricot, citrus peel, licorice, and hazelnut.
It pairs well with raw fish and various seafood dishes, creamy cheeses such as goat's and sheep's cheese, and also with sabayon sauce.
Chenin Blanc, also known as Pinot de la Loire (Pinot), is a grape variety that is representative of the Loire Valley and is blessed with the tuffaceous soil and climate of the Loire Valley.
All grapes are hand-picked, and no pesticides, fungicides, herbicides, or chemical fertilizers are used in the cultivation of the grapes. The producer, Jean-Bernard Mette, is also active as a sculptor.
