Saint-Aubin's elevated location and excellent soil give the wine an easy-drinking, juicy character, making it extremely popular in recent years. Aromas of pear and yellow peach waft through the air. The rich fruitiness is clearly present, but there are also notes of stone, and the palate is particularly salty, resulting in a robust flavor. The wine exhibits the powerful citrus notes of mandarin and grapefruit, which are unique to Saint-Aubin.
David Moret studied viticulture and oenology, and opened his winery in 2000, specializing in white wines. As one of Beaune's leading négociants, he purchases grapes in small plots and vinifies them in his own cellars. He uses approximately 40% new oak barrels in his winemaking, taking care not to overshadow the unique flavors of each plot.
