Belemnite is made from old Chardonnay vines planted between 1956 and 1980. Rooted at an altitude of 300 meters, the vines are in clay soil rich in fossilized belemnite. The grapes are hand-harvested to ensure optimal ripeness. Fermentation and aging take place for 12 months in French oak barrels, 12% of which is new. Regular stirring of the lees further enhances the wine's texture and complexity.
The intense and captivating aroma features notes of lime, pineapple and cedar, with a touch of floral notes. The palate is round and elegant, with a perfect balance of ripe fruit flavors and refreshing acidity, resulting in a lively, lingering finish.
It pairs well with seafood dishes such as oysters and grilled fish, poultry such as roast chicken and turkey, and creamy cheeses such as Brie and Camembert.
About Domaine Morat: A family-run wine estate located in the beautiful hilltop village of Vergisson in southern Burgundy. The 7.5 hectares of vineyards are located in the Pouilly-Fuissé and Saint-Véran AOCs, and the estate primarily produces white wines. Certified organic, the estate follows natural and environmentally friendly practices. The soil is cultivated throughout, with a focus on manual work, and the grapes are hand-harvested.
