"Makdous" is a traditional Lebanese appetizer made by stuffing small, round eggplants with walnuts, garlic, and red peppers, then marinating them in sunflower oil.
Often kept as a pantry staple in Middle Eastern households, this is an Arab-style pickle that is also cherished as a preserved food for winter.
