CHATEAU de VILLARS FONTAINE　BOURGOGNE HAUTES-COTES DE NUITS BLANC 'LES JIROMEES'

This family-run winery was founded in 1971.
Its official name is Domaine de Montmin, but it is also known as Chateau de Villars-Fontaine, named after the historic chateau it owns.
It has a unique philosophy focused on long-term aging, and practices careful soil management using organic fertilizer.
It has been practicing organic practices since 2018, with the aim of obtaining organic certification in 2026.

Located in the Hautes-Côtes region, at a high altitude on the western side of the hills of the renowned Côte de Nuits, the winery's unique temperature difference between day and night produces wines with a fresh, firm flavor.

This wine is characterized by rich, complex aromas of butter, nutmeg, and caramel, a result of barrel aging.

It features a diverse range of aromas, including hawthorn, acacia, lemon, quince, apple, and hazelnut, and, depending on the vintage, even hints of dried mango, apricot, and toast.

The flavor is well-balanced and rich, with a firm structure and a rich umami taste.
It pairs exceptionally well with seafood dishes, white meats such as chicken and turkey, and aged cheeses.
