Basic Freekeh Cooking Recipe
Ingredients:
2 cups freekeh
1.5 cups chicken stock
Olive oil (as needed)
1. Wash the freekeh thoroughly until the water runs clear, then soak for about 30 minutes and drain.
2. Heat olive oil in a pot, add the drained freekeh, and stir-fry (be careful of splashes).
3. Gradually add the chicken stock and bring to a boil, then cover the pot and simmer over low heat for 15-20 minutes, or until the water has evaporated and the freekeh is tender.
4. Serve with chicken, fried almonds, pine nuts, yogurt, or a fresh salad.
