2 cups of freekeh, 1.5 cups of chicken broth, olive oil to taste
Wash the freekeh thoroughly until the water runs clear.
Soak in water for about 30 minutes and drain.
Heat a pot or frying pan and add olive oil.
Place the drained freekeh in a heated pot. (Be careful not to splash oil.)
Heat while stirring until the water evaporates.
Gradually add the chicken broth and bring to a boil over high heat. Cover and simmer until the broth is reduced and the freekeh is tender (about 15-20 minutes or until the broth is absorbed).
Serve with chicken, fried almonds and pine nuts, or with plain yogurt and a fresh salad.
