David Moret studied viticulture and oenology and founded his winery in 2000, specializing in white wines. As one of Beaune's leading négociants, he purchases grapes in small plots and vinifies them in his own cellars. He uses approximately 40% new oak barrels in vinification, taking care not to lose the unique flavors of each plot.
