"Vieilles Vignes" means "old vines" in French, and this wine is made using only grapes harvested from very old vines.
While old vines produce lower yields, the grapes are more concentrated, resulting in a wine with greater complexity and depth.
The concentration derived from the old vines results in a richer, more complex flavor than typical Chablis appellation.
While retaining the crisp acidity and minerality characteristic of Chablis, this wine has a more rounded fruitiness (citrus fruits, white peach, white flowers) and a long finish.
It pairs well with marinated seafood such as oysters, asparagus, sautéed white fish, and chicken dishes.
Founded by Louis and Catherine Poitout, this relatively new wine producer is based in the Chablis region of Burgundy, France. Owning a rare plot of franc-de-pied (own-root) vines, they produce highly distinctive white wines made primarily from 100% Chardonnay while respecting the Chablis terroir.
