The grapes are separated into half and whole bunches or whole bunches. Maceration in tank lasts 9-12 days.
It is aged for 12 to 24 months in 500 liter oak barrels on high quality lees.
Its very pale ruby color is reminiscent of garnet. The aroma is reminiscent of spices, black pepper, cloves, red fruits, raspberries, blackcurrants, blueberries, etc. The taste is fruity with a slight tannic feel.
It pairs well with spicy dishes such as curries, tagines, charcuterie, sweet and sour roasted beets, and aged goat or sheep cheeses.
All grapes are hand-picked, and no pesticides, fungicides, herbicides, or chemical fertilizers are used in the cultivation of the grapes. The producer, Jean-Bernard Mette, is also active as a sculptor.
